Chocolate banana loaf (paleo recipe)
If you’re in need of a treat with no junk ingredients, look no further! Cacao is loaded with antioxidants, so I’ll call this a health food for today 😋
As much as I want to say this was baked with love for my family, it was more of a treat to myself - I LOVE chocolate!😉
Ingredients:
* 4 spotty bananas mashed
* 4 eggs (could try egg replacer if you don’t eat eggs)
* ¼ cup coconut oil melted (you could also use butter)
* ¼ cup sweetener (I used 1/4 cup honey but you could try maple syrup, coconut sugar, etc. If you prefer sweet, bump this up to 1/2 cup)
* 2 cups flour ( I used 1.5 cups almond flour and 1/2 cup arrowroot flour. You could also try a gluten-free flour mix, coconut flour or oat flour)
* 1/3 cup cacao powder
* 1 tsp vanilla extract
* 1 tsp cinnamon
* 1/4 teaspoon salt
* 1 tsp baking powder
* 1/2 tsp baking soda
* ¾ cup dark chocolate chips or mix chocolate chips with crushed walnuts
Directions:
Mix wet ingredients in a bowl, then add all dry ingredients to the same bowl but save the chocolate chips for the end once the batter is combined. Pour into a greased and parchment paper lined loaf pan (I coated the parchment paper with coconut oil). You can top with a few extra chocolate chips, if desired. Bake at 350 degrees Celsius for around an hour.
This could easily be made into chocolate cupcakes (school safe if made without walnuts) or baked in another cake pan. If you try it out with other combinations, let me know how it goes! 🙂
